You must see Connie van Wyk's recipe book to believe it! It consists of pieces of paper and cuttings from magazines and newspapers. She admits that it usually takes her longer to find a recipe than to make it. In any case, here is her recipe for mouth watering Moroccan Herb Bread.

Ingredients:
4½ cups cake flour
10g instant yeast
2ml salt
2 teaspoons dried oregano
2 teaspoons ground coriander
1 teaspoon ground cumin
3 garlic cloves, grinded in salt
125 ml water
250 ml milk
2 tablespoons butter
2 teaspoons sugar
olive oil and coarse salt

Method:

  • Mix all the ingredients except the milk, butter, sugar, oil and coarse salt.
  • Warm the milk, butter and sugar.
  • Add to the mixture and kneed for 10 minutes until elastic.
  • Cover with a cloth and allow to raise in a warm place for approximately 40 minutes.
  • Put in oven pan en allow to raise again.
  • Split in quarters and paint with olive oil.
  • Sprinkle coarse salt on top.
  • Bake at 200°C for 15 minutes and then at 180°C for 25 minutes.
  • Break with your fingers and eat.
  • Bestanddele:
    4½ koppies koekmeel
    10g kitsgis
    2ml sout
    2 teelepels gedroogde oregano
    2 teelepels gemaalde koljander
    1 teelepel gemaalde komyn
    3 knoffelhuisies, in bietjie sout gemaal
    125 ml water
    250 ml melk
    2 eetlepels botter
    2 teelepels suiker
    olyfolie en growwe sout

    Metode:

  • Meng alles tot by die water.
  • Verhit intussen die melk, botter en suiker.
  • Voeg by die mengsel en knie goed vir 10 minute tot elasties.
  • Laat rys in 'n warm plek terwyl dit toe is met 'n doek (ongeveer 40 minute).
  • Sit in oondpan en laat weer rys.
  • Verdeel in blokke en verf met olyfolie.
  • Sprinkel growwe sout bo-oor.
  • Bak by 200°C vir 15 minute en dan by 180°C vir 25 minute.
  • Breek met vingers en eet.
