Ingredients:
15ml olive oil
2 medium leeks cut in slices
2 smoked pork knuckles (±850g each)
375ml apricot juice
125ml meat extract
60ml medium cream cherry
salt and freshly grounded pepper to taste
125g dried apricots
125g sultanas
Method:
Put cast iron pot (no. 2) over medium coals.
Heat oil and saute leeks until soft.
Add knuckles and roast until brown.
Add sauce, extract, cherry and spices. Close lid and simmer for 1½ to 2 hours.
Enough for six people.

125ml vleisaftreksel
60ml mediumsoet sjerrie
sout en varsgemaalde peper na smaak
125g droë appelkose
125g sultanas
Metode:
Sit gietysterpot (nr. 2) oor matige kole.
Verhit olie en soteer preie tot sag.
Voeg kneukels by en braai bruin.
Voeg sap, aftreksel, sjerrie en geurmiddels by. Sit deksel op en prut 1½ tot 2 ure.
Genoeg vir ses mense.
