Jenny's Trifle - Jenny se koekstruif
Jenny Escreet, former headmaster of Settlers Agricultural High School, was not only the first, but also the only woman in the Northern Province at head of an agricultural school. Her favourite recipe ("short and sweet but very nice") is trifle.
Jenny Escreet, vorige hoof van Settlers Agricultural High School, was nie net die eerste nie, maar ook die enigste vroulike hoof van 'n landbouskool in die Noordelike Provinsie. Haar gunstelingresep is koekstruif.
Method:
Spread a sponge cake ("I usually bake my own sponge cake") with apricot jam and cut into blocks.
Sprinkle with chopped nuts and Old Brown sherry.
Pour on hot custard, let it cool.
Top with fresh cream, cherries and nuts.

Smeer appelkooskonfyt op 'n sponskoek ("Ek bak gewoonlik my eie sponskoek") en sny koek in stukke.
Sprinkel gekapte neute en Old Brown-sjerrie op.
Gooi warm vla oor en laat afkoel.
Versier met vars room, kersies en neute.
