Ratatouille noodles
Frieda de Wet is an artist from Hartenbos and she loves to cook for her family and friends. She and her husband loves the Bushveld-area and often choose this part of the country for their camping holidays. This ratatouille noodle bake is one of her most popular recipes.
Ingredients:
1 onion, thinly sliced
1 red, 1 green and 1 yellow pepper, seeded and julienned
125 g courgettes, julienned
250 g tomatoes, skinned and chopped
2 cloves garlic, crushed
15 ml tomato paste
5 ml dried sweet basil
5 ml sugar
salt and freshly ground black pepper
250 ml beef or vegetable stock
250 g coloured pasta twists
50 g low-fat hard cheese
30 g grated whole-wheat breadcrumbs
Method:
Fry onion and peppers over low heat, covered, for five to six minutes.
Add courgettes, cook a few minutes more.
Stir in next seven ingredients, bring to boil.
Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
Meanwhile, cook pasta in lightly salted boiling water. Drain well. Transfer to deep ovenproof dish sprayed with non-stick spray.
Pour ratatouille mixture over pasta, sprinkle with combined grated cheese and crumbs, place under preheated griller until golden brown.
Serve at once.
