Ratatouille noodles

Frieda de Wet is an artist from Hartenbos and she loves to cook for her family and friends. She and her husband loves the Bushveld-area and often choose this part of the country for their camping holidays. This ratatouille noodle bake is one of her most popular recipes.

Ingredients:
1 onion, thinly sliced
1 red, 1 green and 1 yellow pepper, seeded and julienned
125 g courgettes, julienned
250 g tomatoes, skinned and chopped
2 cloves garlic, crushed
15 ml tomato paste
5 ml dried sweet basil
5 ml sugar
salt and freshly ground black pepper
250 ml beef or vegetable stock
250 g coloured pasta twists
50 g low-fat hard cheese
30 g grated whole-wheat breadcrumbs

Method:

  • Fry onion and peppers over low heat, covered, for five to six minutes.
  • Add courgettes, cook a few minutes more.
  • Stir in next seven ingredients, bring to boil.
  • Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
  • Meanwhile, cook pasta in lightly salted boiling water. Drain well. Transfer to deep ovenproof dish sprayed with non-stick spray.
  • Pour ratatouille mixture over pasta, sprinkle with combined grated cheese and crumbs, place under preheated griller until golden brown.
  • Serve at once.
