Tuna Fish Cakes — Tunaviskoekies
The parsley in this recipe is not just for the garnish. Parsley contains vitamin C, vitamin A, potassium, calcium and fibre, and it can help fight bad breath if you chew it after your meal. Just don't tell your hubby that it is good for his health because then he will never eat it again!
Die pietersielie in hierdie resep is nie net daar net vir die garnering nie. Pietersielie bevat vitamien A, vitamien C, kalium, kalsium en vesels, en boonop help dit slegte asem voorkom as jy dit na 'n ete kou. Moet net nie vir jou man vertel dat dit gesond is nie, want mans is bang vir vitamienvergiftiging!
Ingredients:
2 big potatoes
25ml margarine
370g tuna, drained and flaked (2 x 185g tins)
25ml fresh, finely chopped parsley
salt and freshly grounded black pepper to taste
2 eggs, lightly beaten
120g dry bread crumbs (250 ml)
frying oil
parsley sprigs and lemon slices for garnishing
Method:
Peal potatoes and grate very fine. Mix potatoes with the margarine.
Add the tuna, parsley, salt and pepper and half of the egg mixture.
Leave the mixture for 20 minutes in the refrigerator to cool down.
Form the fish cakes with a tablespoon en dip each one in the egg. Cover the fish cakes with bread crumbs. Let it cool down for a further 10 minutes in the refrigerator.
Heat the oil and fry the fish cakes for 2 to 3 minutes on each side.
Flatten the fish cakes with a fork while you are frying it.
Drain the fish cakes on kitchen paper.
Garnish with parsley sprigs and lemon slices.

Bestanddele:
2 groot aartappels
25ml margarien
370g tuna, gedreineer en gevlok (2 x 185 g-blikke)
25ml vars, fyn gekapte pietersielie
sout en vars gemaalde swartpeper na smaak
2 eiers, effens geklits
120g droë broodkrummels (250 ml)
braaiolie
pietersielietakkies en suurlemoenskyfies vir garnering
Metode:
Skil die aartappels en rasper baie fyn. Meng die aartappel met die margarien.
Voeg die tuna, pietersielie, sout en peper en die helfte van die geklitste eier by.
Verkoel die mengsel 20 minute lank in die yskas.
Vorm die viskoekies met 'n eetlepel en doop elke koekie in geklitste eier. Bedek die viskoekies met broodkrummels. Verkoel dit ongeveer 10 minute lank in die yskas voordat dit gebraai word.
Verhit die olie en braai die koekies ongeveer 2 tot 3 minute lank aan 'n kant.
Druk die koekies met 'n vurk plat terwyl dit gebraai word.
Dreineer die viskoekies op kombuispapier.
Garneer dit met pietersielietakkies en suurlemoenskyfies.
