Margaret's Milktart - Margaret se melktert

Tannie Margaret Visagie (85) of Vaalwater is well known in the Waterberg-area.
Everybody knows her as the up-and-about librarian of the Vaalwater library.
She is also renowned for her mouth-watering milktart.

Almal ken haar as die op-en-wakker bibliotekaresse van die dorpsbiblioteek.
Sy is ook wyd bekend vir haar watertandlekker melktert.

Ingredients:
1 cinnamon stick
500ml (two cups) warm milk
4 tablespoons sugar
salt
4 desert spoons maizena
2 tablespoons butter
2 eggs, slightly whipped
20cm prepared puff pastry dough, unbaked

Method:

  • Preheat oven to 232ºC (450ºF), prepare pastry and keep in the refrigerator.
  • Put cinnamon stick into the milk, heat until just before cooking and take cinnamon out.
  • Mix the sugar, salt and maizena with a little bit of the milk. Add mix to the warm milk and keep stirring until the mixture gets thicker.
  • Take from the stove and add butter. Let to cool down a bit before adding whipped eggs.
  • Pour mixture into pastry, sprinkle extra cinnamon over it and place in pre-heated oven.
  • Reduce the heat after the first 10 minutes to 177ºC (350ºF) and bake for a further 15 minutes.
  • Decorate with cinnamon or cinnamon sugar. Serve as a desert or with coffee or tea.

  • Bestanddele:
    1 kaneelstokkie
    500ml (2 koppies) warm melk
    4 eetlepels suiker
    sout
    4 desertlepels maizena
    2 eetlepels botter
    2 eiers, effens geklits
    20cm voorbereide blaartertdeeg

    Metode:

  • Verhit oond tot 232ºC (450ºF), berei deeg voor en bêre in die yskas.
  • Sit kaneelstokkie in melk, verwarm tot net voor kookpunt en haal kaneel uit.
  • Meng die suiker, sout en maizena met 'n bietjie melk. Voeg mengsel by die warm melk en roer totdat die mengsel verdik.
  • Haal van die stoof af en voeg botter by. Laat bietjie afkoel en voeg dan die geklitste eiers by.
  • Gooi mengsel in die deegkors, sprinkel kaneel oor en sit in voorverhitte oond.
  • Verminder die hitte ná 10 minute tot 177ºC (350ºF) en bak vir nog 15 minute.
  • Versier met kaneel of kaneelsuiker. Bedien as nagereg of met koffie en tee.
